Hot Fudge Sauce @LucyBurdette


 LUCY BURDETTE: After being served the most divine profiterole in Paris, I knew I had to try making them. But this would also require a batch of hot fudge sauce. (I know, the sacrifices we make on this blog!) Today’s recipe is for the hot fudge sauce, which makes a lot. You could make half the amount if you don’t want it lingering in the fridge…or give it away in little mason jars to friends. The recipe was borrowed from the New York Times Cooking app. I might try freezing the leftovers and will report back on the results.



Ingredients

2 cups heavy cream

4 tablespoons unsalted butter

½ cup light brown sugar

¾ cup granulated sugar

¼ teaspoon fine sea salt

2 ounces bittersweet chocolate in small pieces

1¼ cups sifted good quality cocoa

½ teaspoon vanilla extract

In a medium pan, combine the cream, butter, sugars and salt and bring to a simmer. Meanwhile cut the chocolate into pieces and sift the cocoa. (I used King Arthur triple cocoa blend and Ghirardelli’s chocolate.)








When those ingredients are combined smoothly, add the chocolate pieces and stir until melted.








Add the cocoa and whisk everything well. Bring it back to a simmer and whisk until thick and shiny. Take the pan off the heat and whisk in the vanilla.









Serve over ice cream, waffles, whatever suits your fancy! Store in the refrigerator and warm it over low heat on the stove or for 30 seconds or less in the microwave. (PS, we did freeze some of it and it tasted fine when melted!)

By the way, our favorite ice cream shop in Key West is called Flamingo Crossing. I always order coffee ice cream (I think it's called cafe con leche) and top it with hot fudge. I have to say my version was pretty darn close to being as delicious as theirs! What's your favorite ice cream treat or topping?

    I do like hot fudge or a hot fudge caramel combo on ice cream. I promise I don’t eat it very often! For an ice cream flavor, I am partial to Tillamook chocolate peanut butter and Ben & Jerry’s Phish Food. I usually get a pint of Phish Food around my birthday ( which is coming up soon. Thanks for reminding me to get my ice cream!)

  5. Delish! Coffee ice cream with hot fudge is perfection.

    Years ago in Bloomington, Indiana, an ice cream shop made peanut-butter/chocolate chip milkshakes. SO good.

  7. Coffee ice cream is one of my staple flavours. But I also like eating unique regional ice creams and I don't want the flavours masked by any sauce or toppings. Yesterday, I ate a waffle cone on the Halifax waterfront with 2 scoops: PEI apple crisp and wild blueberries. Perfect Atlantic Canada flavours made by COWS ice cream.

  9. I love hot fudge sauce, ideally on butter pecan ice cream. Stewart's, a regional store in this part of NY and surrounding areas, make the best! Years ago, maybe in the late Seventies, Julia Child made a fantastic hot fudge sauce. I made it once and it was terrific! I've been looking for that recipe ever since. It may have been in one of her books that burned up in my fire. All I can remember of the recipe was that it called for a tablespoon of corn syrup.

    2. Grew up eating Stewart's ice cream. In college I think I had their coffee and cream flavor with hot fudge at least twice a week! A coworker who grew up in dairy country in Central NY said it was a patriotic duty to eat Stewart's ice cream out of a soup bowl. Stewart's for those who are uninitiated, is a convenience store incorporating an ice cream shop, complete with make your own banana split bar.

    3. Karen, thank you! That's the closest recipe I have seen. Since her show was on so long ago it is "possible" that I have remembered the amount wrong. I'll be making it soon. Since my son likes to make homemade ice cream, this will be the perfect topping!

  10. Now there's an Ingredient to Happiness, a really good hot fudge sauce! Two kinds of good chocolate to make it? I heartily approve, Roberta.

    Living in Graeter's country, black raspberry chip is a favorite, just like everyone else. But I also enjoy coffee, coconut chip (tastes like a frozen Mounds bar), chocolate or mocha chocolate chip. Black walnut and butter pecan used to be my favorites, but they're not as easy to find as they used to be, nor is Whitehouse (vanilla with half cherries in it). Any of these flavors would be fabulous with your sauce!

    I'm making mint ice cream today for a party tomorrow, coincidentally, using my own mint. I was going to make chocolate cookies to go with it, but maybe I'll use this sauce instead. Hmm.

  11. Yummm so delicious! As a kid, hot fudge sundaes at the Newberry's counter were my go to treat. My son was on a Jeni's ice cream kick for awhile and a number of her flavors are fabulous--including Brambleberry Crisp. The ice creams I buy most often are Ben and Jerry's with caramel--Salted Caramel Almond (which was a short term flavor) or Karmel Sutra or Salted Caramel Core.

  12. From Celia: oh, oh Roberta, how could you? Sooooooo delicious I believe ice cream without hot fudge is a day without sunshine. Here in Maine we have several delicious local ice cream makers. Right now my fav is Shaker Pond Salted Caramel ice cream. Delicious beyond description and with a dressing of hot fudge. Well I may need to get cooking. Many thanks.

    Ohhhhhh coffee ice cream with chocolate sauce—yes, I agree. the BEST! ( I also went through a phase of chocolate ice cream with pineapple, very very yummy. )
    Good chocolate sauce is miraculous, on profiteroles is life changing!

  14. Definite YES to hot fudge! My favorite is hand cranking homemade vanilla as it brings back so many memories of fun family times. My go to in the grocery store freezer aisle is Blue Bunny Bunny Tracks. It is chocolate and peanut butter with little chocolate bunnies mixed in. Le Mars, Iowa is the home of Blue Bunny ice cream.

  15. This hot fudge recipe looks and sounds divine, Lucy! Think I’ll try it tomorrow! In the summer for a special treat we go the Kimball’s ice cream stand in Carlisle, MA and have hot fudge sundaes lunch. If caramel or coconut is available I have that with hot fudge and whipped cream. Otherwise vanilla for me. Suzette Ciancio

  19. Hot fudge sundae with marshmallow.
    Years ago there was an ice cream shop called Baileys in Boston that sold only ice cream and were known for their hot fudge sundaes. The ice cream was scooped into a traditional sundae dish with a small tray beneath it. The fudge sauce was then ladled over the ice cream with the sauce cascading over the sides. You always scraped off the sauce from the tray first.
    Before I was born, my mother worked half a day on Saturdays then would meet one of her younger
    sisters and treat her to a sundae at Baileys.
    In later years, Baileys expanded their locations and their menu, but it was never the same as the original.

  23. Snelgroves was my favorite local ice cream maker. They introduced several new flavors, one of which was Burnt Almond Fudge. Just perfection. Especially served with hot fudge. They named their specialty confections after local ski resorts, this one was called a "Brighton". And yes, it did "brighton" my day. After Snelgroves went out of business, I searched for a replacement for their Burnt Almond ice cream. The closest I've found is Farr Burnt Almond Fudge, and I'm continuing the delight...lots of hot fudge topping on that, PLEASE.
