JENN McKINLAY: I was supposed to post Friday's word search answer yesterday, but shockingly (ha!) I forgot. So it is at the bottom of today's post in which I'm sharing my recipe for salted caramel sauce because it bumped my apple pie and my pumpkin pie up "two notches" according to my father-in-law and I absolutely agree.
Salted Caramel Sauce:
1 cup sugar
6 Tablespoons unsalted butter, room temperature
1/2 cup heavy cream, room temperature
1 teaspoon salt
Heat sugar in a steel saucepan over medium heat, stirring constantly with a wooden spoon. Sugar will clump but melt into an amber colored liquid. Once the sugar is all melted, add in the butter. Be careful because the sauce will bubble rapidly and it will burn you! If it starts to separate, remove from heat and whisk until smooth. Slowly add in the heavy cream while stirring constantly. After all the cream has been added, stop stirring and let it bubble for 1 minute. It will rise while it heats. Remove from heat and stir in the salt. It will be watery but will thicken while it cools. Cover tightly and it will keep for one month in the refrigerator. Mine has never lasted more than a few days :)
True confession time: I used to be a hot fudge and marshmallow sauce gal, but I have crossed the enemy line and am all about caramel sauce now. If you're saucing up your dessert, what's your go to? Chocolate? Raspberry? Caramel? Other?

DeleteYummy sounding recipe, but neither of us can do heavy cream, we have to watch our cholesterol. But we do hard sauce on our pudding cake.

ReplyDeleteIrwin definitely is a hot fudge kind of guy and it's probably my favorite, too. But homemade sauce is always a step up.

DeleteDepends on the dessert. Anything apple would definitely be elevated with your caramel sauce. If say, it was an ice cream sundae bar, I would use chocolate, caramel, AND strawberry sauces.

DeleteSavory dishes are much more appealing to me, but on the rare occasions where I want a sauce, caramel or bittersweet chocolate (Graeter's makes one that is divine) are my go-to choices. Thanks for the recipe, Jenn!

DeleteI've become a huge fan of salted caramel and salted chocolate. I remember the first time I encountered the phenomenon; I couldn't wrap my head around salt+chocolate. Now, I've incorporated both of them into my repertoire of desserts!

DeleteA friend introduced me to potato chips with dark chocolate in the '80s. I was also skeptical, but one taste sold the combination!

DeleteI do love caramel. And salted caramel even more. But for a topping I go with whipped cream every time. Best candy ever for a caramel lovers: Sees Molasses chips. I make turtles (chocolate, caramel, and nuts (pecans and/or cashews and/or almonds) every holiday as stocking stuffers.

DeleteI love the simplicity of your caramel sauce recipe, but, of course, I know that stirring and staying right on top of something like that is crucial. I admit to being more of a chocolate fan, but there is nothing better, and I mean nothing, than my mother's jam cake with caramel icing. I haven't really gotten into salted caramel or salted chocolate, but maybe I just haven't given them the chance they might deserve. I was planning on doing the word search later today, so I won't look at the answers until later.
